I make this delicious meatloaf very frequently and it tastes amazing! It is also gluten, dairy, and sugar free!!!
1 lb ground beef
1/2 lb ground sausage
salt & pepper to taste
1 Tablespoon sage
1/2 teaspoon garlic powder (more if you love garlic)
2 teaspoons chili powder
1 small onion, diced small
1 small sweet potato, diced in 1/2 inch cubes
1/4 c almond flour, more if needed
Micro Leeks, diced
(Total bake time about 1 hour)
1. Preheat oven to 350 F and get a loaf pan.
2. Combine beef and seasonings, then add diced onion and sweet potatoes. Make a crater in the middle and add in egg, almond flour, a tablespoon of micro leeks, and 3 tablespoons of BBQ sauce and knead. If it is still really wet just add a little more almond flour.
3. Put everything in the loaf pan and flatten into a loaf. Bake for 30 minutes, then remove and add micro leeks to the top to cover it, Then add BBQ sauce to cover it. Bake for another 15-30 minutes, until cooked all the way through.
4. Take it out of the oven and let set 10 minutes or so before cutting into it. Enjoy!
