This recipe is super easy and quick, these biscuits are perfect for making sliders, and dipping & slathering in sauce. They are also small and bite size!
1/2 cup melted butter
1/2 cup coconut flour
1/4 teaspoon baking powder
1/2 c shredded cheese plus extra for the top of the biscuit - use mozzarella for a more plain flavor and use cheddar for a more salty flavor
1/4 teaspoon salt
Preheat oven to 400 degrees F
Get a baking tray and a silicone mat or parchment paper out and on the counter
Melt the butter in the microwave or on the stove and let it cool. While is it cooling scramble the eggs in another bowl. Once the butter has cooled off a bit, slowly add it to the eggs while whipping them with a fork until it is all combined.
Melt the shredded cheese, then add in the coconut flour. salt, and baking powder to the egg-butter mixture and stir until fully combined.
Then add in the melted cheese and use a fork to stir it in. If the dough is too sticky to handle, add more coconut flour slowly until the batter can roll in your hands.
Portion into 12-14 biscuits and flatten the top with a fork.
Add a small pinch of shredded cheese onto the top of the biscuit if desired.
Bake for 12-15 minutes on 400 degrees f or until biscuits are golden brown,
Remove and let cool. Eat immediately with breakfast, lunch, or dinner, or just as a snack!
