Easy & Delicious Stuffed Peppers

I used this recipe as a meal prep for my lunches at work. These reheat nicely and taste good leftover. Try them out and let me know what you think!


cooked rice, about 2 1/2 cups

1/2 lb ground spicy sausage (or turkey), crumbled and cooked

1/2 can of tomato paste

a pinch of chopped leek microgreens

Salt & Pepper

mozzarella (log style)

4 bell peppers


  1. Pre-heat the oven or air fryer to 400 degrees F

  2. In a medium bowl, combine the rice, meat, tomato paste, leeks, and seasonings. Once combined, make sure to taste it and add salt and pepper as needed. The tomato paste makes this recipe need a ton of salt so be sure not to skip this step before putting the filling in the pepper.

  3. Cut the peppers across the top and take all of the seeds and white parts out of the pepper. Spoon the filling into the pepper until it is almost completely full,

  4. The mozzarella should already be sliced, so peel off a slice from the log for each pepper and place it on the top.

  5. Cook for about 13 minutes in the air fryer, you may need a few more minutes when using a regular oven.

  6. Take out and poke with a fork to see if the pepper is cooked all the way through. Enjoy after they have cooled down enough to eat!
