BBQ Chicken Personal Pizza - Easy & Gluten Free

This recipes uses:

My Super Easy Homemade BBQ sauce


Ingredients for the crust:

10 oz canned chicken (get the 100% chicken)

1.5 oz grated parmesan cheese (I use a microplane for best results)

1 large egg


Gather your desired toppings:

I like to put micro leeks on this one but you can use onions if you don't have any

For the cheese I like parmesan or mozzarella

I don't normally add extra chicken to the top but you can if you wish! The crust is usually enough chicken from me though.


Instructions:

  1. Make the BBQ sauce first because it is best when is simmers for a half hour.

  2. Preheat the oven to 400 degrees.

  3. Then squeeze the water out of the chicken can and spread it out on a baking sheet that has a silicone mat or parchment paper on it. Then put it in the oven for 12 minutes to dry the chicken out, but don't let it get so dry that it starts turning brown.

  4. While you are doing that, prepare all of your toppings. Shred the cheese and chop any veggies you are using.

  5. Take the chicken out when it is dry and put it in a heat safe bowl while still hot, microplane the parmesan onto the top of the chicken and then crack the egg in it. Mix it all up with a fork.

  6. Put it back on the baking sheet in a pile. Use parchment paper to squeeze it and get any air bubbles out, then spread it out into a crust, try to not leave any sticking out and just make a flat disc, a bit less than a half inch thick. It doesn't have to be perfect.

  7. Put just the crust back in the oven for 10 more minutes.

  8. Take it out and put the sauce and toppings on as you would like. Then put it back in the oven for another 10 minutes or until the toppings are hot and cooked.

  9. Wait to cool for 2 minutes, cut and then serve!
