This recipe makes three 8-9 inch pizzas. You can use a regular oven for this recipe if you don't have an air fryer.
This recipe is written for using an air fryer and a pizza stone, but you can make it in the regular oven (it will need to cook for a different amount of time). The pizza stone also comes with a nice little board that has a handle for taking the pizza in and out of the air fryer.
For the crust
3/4 cup warm water (110-120 degrees F)
1 packet of yeast (2 1/4 teaspoons)
1 tablespoon sugar
2 cups gluten free flour plus extra for forming the Crust (Namaste Gluten Free Perfect Flower blend)
1 1/2 teaspoons salt
1 large egg
1 tablespoon olive oil
1 teaspoon apple cider vinegar
For the sauce:
Make my delicious quick chunky red sauce
Add in garlic scapes when making this sauce! This time of the year you can find them at the farm market; any farmer growing garlic has garlic scapes!
For the toppings:
Shred mozzarella blocks or buy the mozzarella in logs that is a bit softer
Cut pepperoni from the log, about 9 pieces for each pizza unless you want a super pepperoni pizza, then we add more.
Add other additional toppings like sundried tomatoes, olives, green peppers or anything else you use as pizza toppings. I like to place toppings under the cheese that tend to burn easily like bacon and sundries tomatoes
In a small bowl add the water and the sugar together and sprinkle the yeast packet into the water while stirring so it doesn't clump up. Let that sit for 5 minutes until it gets foamy.
Preheat the pizza stone at 400 degrees in the air fryer for 4 minutes.
In a medium bowl, mix the flour and salt together.
Once the yeast mixture is ready, take the flour mixture and add in egg, olive oil, vinegar, and then the yeast mixture. Stir with a rubber spatula until it all comes together.
On a piece of parchment paper, sprinkle flour around evenly. Take the dough in the bowl and split it into three even pieces. I use a scale to be super exact. Weigh the whole piece and divide it by three to know how much each crust needs weigh.
Using a bit of extra flour on your hands and on the paper, flatten out the dough into a thin 8-9 inch crust and stab with a fork all over.
Place in the air fryer and cook at 400 degrees for 7 minutes, and then flip and cook for another 5 minutes.
After that is done cooking add all of your toppings. The put the pizza back in the air fryer for another 6-7 minutes or until your toppings are cooked through.
Remove from the oven and let cool for at least 3 minutes before cutting.
Enjoy with leek or mustard microgreens for an extra kick of flavor!
