4 Ingredient Granola Bars - No Baking

Super delicious and simple, with less ingredients then your average granola bar! My favorite snack to prep and take to work. It's great to make in the summer when you don't want to have to turn the oven on.


2 cups plus one handful of nuts, I like to use a combination of almonds, peanuts, and walnuts

100% peanut butter or almond butter, no additives!!

1 cup coconut flakes

25 dates

You will need a food processor, a rubber spatula, and a casserole dish


  1. Put 25 dates and a handful of peanuts into the food processor and chop into small pieces.

  2. Add in the rest of the nuts, about 2 cups, and pulverize to desired size.

  3. Put it all in a bowl with the coconut flakes.

  4. Then pour 100% nut butter into the bowl while stirring, until it clumps up and holds together.

  5. Using a rubber spatula, transfer to a casserole dish (I use one with a lid that locks on to keep the moisture in) and flatten it out to get the air pockets out. Top with extra coconut flakes if desired.

  6. Refrigerate for 30 mins or until cuttable. Then cut to serve! I always cut it as needed so it doesn't dry up and get crumbly.
